Trisodyum fosfatın piliç göğüs derilerinde aerob mezofil bakteriler, psikrotrof bakteriler, Pseudomonas spp. ve enterobakteriler üzerine etkisi

Abstract

Bu çalışma, trisodyum fosfatın (TSF) piliç göğüs derilerinde aerob mezofil bakteriler, psikrotrof bakteriler, Pseudomonas spp. ile enterobakteriler üzerindeki redüksiyon etkisini saptamak amacıyla yapılmıştır. Bu amaçla örnekler, steril çeşme suyu (kontrol, 25°C±1) ile % 8, 10 ve 12 konsantrasyonunda ve 25°C±1 sıcaklıktaki TSF solusyonuna 15 dakika süreyle daldırılmıştır. Mikrobiyolojik analizler sonucu, 0. günde kontrol grubuna göre toplam aerob mezofil bakteri sayısı ile psikrotrof bakterilerde sırasıyla 0.72-1.26 log, 0.67-1.14 log düzeyinde redüksiyon oluştuğu saptanmıştır. Pseudomonas spp. ve enterobakteriler ise kontrol grubuna göre muhafaza süresince genelde saptama sınırının (<2.0 log10 kob/g) altında bulunmuştur.

Effects of trisodium phosphate on aerobic mesophilic bacteria, psychrotrophic bacteria, Pseudomonas spp. and Enterobacteriaceae on chicken breast skin

Abstract

This study was undertaken to determine the reduction effect of trisodium phosphate (TSP) on aerobic mesophilic bacteria, psychrotrophic bacteria, Pseudomonas spp. and Enterobacteriaceae on chicken breast skin. For this purpose, skin samples were immersed in 8 %, 10 %, 12 % of TSP solution or sterile tap water (control) at 25°C±1 for 15 minutes. Compared to control group, TSP applied groups showed 0.72-1.26 log and 0.67-1.14 log reductions on total aerobic mesophilic bacteria and, psychrotrophic bacteria counts respectively on day 0 of storage. Pseudomonas spp. and Enterobacteriaceae were found under the detection limits (<2.0 log10 cfu/g) during the storage.
